This has quickly become a family favorite around our house. If you’re looking to change from the normal mashed potato recipe this is great to add to your menu.
The greatest thing, you can make it the day before and just heat it up the day of Thanksgiving!
Now all of the ingredients are approximate. If you like extra creamy potatoes then throw in some extra sour cream, if you love bacon (who doesn’t) then you can make extra bacon and throw it in the mixing bowl with everything.
8-10 red potatoes
8 oz of sour cream
1/4 cup of softened butter
1/4 tsp garlic salt
1/4 pepper
3 green onions, chopped
4 cups shredded cheddar cheese
5 strips of bacon, cooked
Preheat oven to 350 degrees.
Wrap 8-10 potatoes in foil and bake for 1 hour.
Unwrap your potatoes and chop them into quarters.
Combine potatoes, sour cream, salt, pepper, butter, and half of the cheese in mixing bowl. Use potato masher to mix all ingredients.
Transfer mixture to a 13×9 baking dish.
Sprinkle remaining cheese on top.
The best part: sprinkle bacon on top.
Bake for 20 minutes or until cheese is complete melted.
